Blueberry Tarts

On Sunday night it rained, and I had a hankering for some delicious warm blueberry tarts to eat with a cup of hot tea and watch the rain on the window. Often when I get these idealistic ideas in my head, they don't pan out. The rain  stops. The tarts burn. I run out of milk for tea. This time it was PERFECT. The tarts were warm and crumbly. The blueberries sticky and sweet. The tea, hot and milky and the rain pattering loudly on the window.

For the pastry I used this recipe (scroll to the bottom) however I added nutmeg and cinnamon and replaced half the sugar for honey. For the filling I stewed blueberries with powdered sugar, a small amount of flour and a squeeze of lemon till it was perfectly sticky and jam like. After blind baking the tart shells, I filled them with the blueberry mixture and popped them in the oven for another 15-20mins. Mmmm yum! I may just have another one now!

How did you spend your Sunday evening?

Happy Tuesday everyone!

  1. These tarts look scrumptious! I wish we could get blueberries here. I baked a German poppyseed style slice. I think your tarts turned out much better:)
